Pinot Noir from Beaune, France
Guiton draws upon grapes grown in vineyards in the south of Côtes de Beaune, near Volnay and his premier cru vineyards. The vines were planted in sand-clay and limestone-clay soils in 1991. While not certified organic, no pesticides or herbicies are used during the winemaker’s minimally invasive approach. Grapes are hand-harvested and sorted on a destemming table and fermented in concrete with native yeast, prior to ageing in used oak for 9 months and then in bottle for 3 months before release.
The result is a very pleasant Pinot Noir featuring ripe fruit and good structure before finishing clean on the palate with nearly no tannin.
