Roche Mer could mean mother rock or rock of the sea, both translations give us an insight into this wine. Two sites, one planted in 1959, the other in 1980, have poor, thin soil over limestone. Fermentation takes place in the barrels, and the wine is kept on its lees, which are periodically stirred to enhance flavor and nuance, throughout the elvage. The wines are raised entirely on their lees in barrels for 10 to 12 months using preferred oak from the center of France for its fine texture. Expect lifted, crystalline white fruits, very tight, pure, with a crunchy acidity, and a saline minerality to the structure. Fine, elegant, with a glassy texture, peach fruit and a touch of red apple in its focused finish.
